Canary Melon and Cilantro Salad

Allow me to introduce you to the canary melon.


Canary melon is amazing. It’s sweet and juicy, like honeydew dipped in sugar crystals. You could eat it like candy for dessert. I discovered this delightful fruit by happenstance. I asked the grocer about it and he sliced one up on the spot to let me have a taste.


Right now canary melon is perfectly in season and pairs beautifully with other fruit-although you really don’t need to jazz it up with much of anything.

1 canary melon, cubed
2 cups watermelon, cubed
1 small bunch cilantro, finely chopped
1 teaspoon extra virgin olive oil
a pinch of course salt

Directions: In a bowl, combine the fruit.


Toss with the olive oil, salt and cilantro. The salt really brings out the flavor of the melon.


Serve chilled or at room temperature.

Looks awesome, but do you think it would work with truffled olive oil or chocolate balsamic vinegar?

I’ve been buying canary melons, but I had no idea that’s what they were called! They’re so good. I love the idea of this sweet salad with cilantro, it looks so light and refreshing. I’ll definitely be giving this a try, thanks for the recipe!

They are bright yellow and often located near the green honeydew. Enjoy!
